Wood-fired pizzas: fugazzeta special and ham, egg, and bell pepper

Ingredients
Dough:
- 500g Bread Flour (Harina 0000)
- 300g Water
- 15g Salt
- 10cc Olive Oil
- 20g Yeast
- 1 tsp Sugar
Raw Tomato Sauce:
- 500cc Tomato Puree
- Seasonings to taste
Classic Pizza:
- 300g Mozzarella, shredded
- 100g Cuartirolo cheese
- 100g Cooked Ham, sliced
- 1 Tomato, sliced
- Roasted Red Bell Pepper
- 50g Grated Cheese
- 4 Eggs
- Provencal Herbs
Fugazzeta Filling:
- 450g Mozzarella, shredded
- 150g Cuartirolo cheese
- 1 Longaniza (sausage)
- 100g Cooked Ham, sliced
- 1 Tomato, sliced
- Provencal Herbs
- 2 Red Onions
- 50g Parmesan Cheese
Procedure:
For the Dough:
- In a bowl, combine the bread flour and salt.
- Dissolve yeast and sugar in warm water. Add to the flour mixture along with olive oil. Knead until you get a smooth, elastic dough.
- Cover the bowl with a cloth and let the dough rise in a warm place until it doubles in size.
For the Raw Tomato Sauce:
- Mix tomato puree with seasonings of your choice. Set aside.
Classic Pizza:
- Roll out the dough and spread a layer of raw tomato sauce.
- Add shredded mozzarella, cuartirolo cheese, sliced ham, sliced tomatoes, roasted red bell pepper, grated cheese, and cracked eggs.
- Bake in the MB Chef wood-fired Oven until the crust is golden and the cheese is melted and bubbly.
Fugazzeta Filling:
- Roll out the dough and spread a layer of raw tomato sauce.
- Add shredded mozzarella, cuartirolo cheese, sliced longaniza, sliced ham, sliced tomatoes, provencal herbs, sliced red onions, and Parmesan cheese.
- Fold the dough over the filling, seal the edges, and create a rectangular shape.
- Bake in the MB Chef wood-fired Oven until the crust is golden and the cheese is melted and bubbly.
