Marinated ribs

Ingredients

  • 1 rack of ribs.
  • 1.5 onions.
  • 350 g carrots.
  • 50 g curry.
  • 100 g ginger.
  • 20 g dried mushrooms.
  • 280 g brown sugar.
  • 1.5 L soy sauce.
  • 10 g ground chili.
  • 8 star anise.
  • 300 ml fish sauce.
  • 1.5 L water.
  • 1 head of garlic.

🍖Side Salad:

  • Arugula.
  • Red onion.
  • Radishes.
  • Orange.
  • Olive oil and vinegar.

🍖Procedure:

  1. ⚡️Julienne cut the vegetables. Mix all the spices and place them on the meat side of the ribs.
  2. ⚡️Then, place the ribs, meat side down, on top of the vegetables in a deep baking dish. Add soy sauce, water, and fish sauce. Cover with aluminum foil and bake in an MB Chef Oven at 400°C for 3 hours.
  3. ⚡️Before the meat becomes too tender, turn the ribs and cover again. Cook for at least 3 more hours, basting it with the juices every half hour.
  4. ⚡️Uncover to let the ribs take on color and serve.
  5. ⚡️Prepare the salad.
  6. ⚡️Plate everything together and enjoy!

Note: Make sure to check the ribs periodically to ensure they cook to your desired level of tenderness..
