Ingredients
Fresh Pork Belly:
- 1 piece
Spices:
- Caraway (Kümel) 1 tbsp
- Juniper berries 1 tbsp
- Whole black peppercorns 1 tbsp
Brine:
- Water 6 liters
- Sugar 400 grams
- Salt 400 grams
- 1 head of garlic
- 2 lemons
- Mustard seeds 2 tbsp
- Black pepper 2 tbsp
Side Dish:
- Potatoes 1 kilogram
Procedure:
- Prepare the Brine:
- In a large pot, combine water, sugar, salt, garlic, lemon, mustard seeds, and black pepper.
- Bring the brine to a boil, stirring until sugar and salt dissolve.
- Let it cool completely.
- Marinate the Pork Belly:
- Rub the pork belly with caraway, juniper berries, and black peppercorns.
- Submerge the pork belly in the cooled brine. Cover and refrigerate for at least 12 hours or overnight.
- Preheat MB Chef Oven:
- Preheat your MB Chef Oven to the desired temperature (recommendation: 500°F).
- Prepare the Potatoes:
- Peel and cut the potatoes into desired shapes.
- Cooking:
- Remove the pork belly from the brine and pat it dry.
- Place the pork belly in an MB Chef Oven-safe dish, skin side up.
- Roast in the MB Chef Oven for approximately 2-3 hours, or until the skin is crispy and the internal temperature reaches a safe level.
- Roast the Potatoes:
- Toss the potatoes with olive oil, salt, and your favorite herbs.
- Place them in an oven tray and roast until golden brown and crispy.
- Serve:
- Slice the crispy pork belly and serve it with the roasted potatoes.
