Crispy pork belly with roasted potatoes

Ingredients

  • Fresh Pork Belly:

    • 1 piece

    Spices:

    • Caraway (Kümel) 1 tbsp
    • Juniper berries 1 tbsp
    • Whole black peppercorns 1 tbsp

    Brine:

    • Water 6 liters
    • Sugar 400 grams
    • Salt 400 grams
    • 1 head of garlic
    • 2 lemons
    • Mustard seeds 2 tbsp
    • Black pepper 2 tbsp

    Side Dish:

    • Potatoes 1 kilogram

    Procedure:

    1. Prepare the Brine:
      • In a large pot, combine water, sugar, salt, garlic, lemon, mustard seeds, and black pepper.
      • Bring the brine to a boil, stirring until sugar and salt dissolve.
      • Let it cool completely.
    1. Marinate the Pork Belly:
      • Rub the pork belly with caraway, juniper berries, and black peppercorns.
      • Submerge the pork belly in the cooled brine. Cover and refrigerate for at least 12 hours or overnight.
    1. Preheat MB Chef Oven:
      • Preheat your MB Chef Oven to the desired temperature (recommendation: 500°F).
    1. Prepare the Potatoes:
      • Peel and cut the potatoes into desired shapes.
    1. Cooking:
      • Remove the pork belly from the brine and pat it dry.
      • Place the pork belly in an MB Chef Oven-safe dish, skin side up.
      • Roast in the MB Chef Oven for approximately 2-3 hours, or until the skin is crispy and the internal temperature reaches a safe level.
    1. Roast the Potatoes:
      • Toss the potatoes with olive oil, salt, and your favorite herbs.
      • Place them in an oven tray and roast until golden brown and crispy.
    1. Serve:
      • Slice the crispy pork belly and serve it with the roasted potatoes.
