Homemade Pizza Sauce

Ingredients
- 8 tablespoons (½ cup) olive oil
- 2 garlic cloves, finely chopped
- 1 teaspoon dried oregano
- 2 x 400g (14-oz.) cans of chopped tomatoes, drained with juice reserved
- Salt and freshly ground black pepper to taste
Instructions:
- In a large, shallow pan, heat the olive oil until it’s almost at the smoking point. Using a wok for this step works well.
- Carefully add the chopped garlic, dried oregano, and the drained chopped tomatoes to the hot oil. If the tomatoes begin to stick to the pan, you can add a little of the reserved canned tomato juice to help loosen the mixture.
- Cook the mixture over high heat for about 5 to 8 minutes or until the sauce thickens and develops a glossy appearance. Be cautious of splattering while cooking. Season the sauce with salt and freshly ground black pepper according to your taste.
- Pass the sauce through a food mill set over a bowl. This step helps remove any seeds and skin from the sauce, giving it a smoother consistency. If you prefer a thicker sauce, you can return the smooth sauce to the pan and continue reducing it further.
- Ladle the sauce into the centre of your pizza base and use the back of a ladle to spread it out evenly in a circular motion.
