Mediterranean and vegetables baked calzones

Dough:
- 200g Whole Wheat Flour
- 300g All-Purpose Flour
- 25g Yeast
- 300ml Water
- 10g Salt
Filling 1 (Mediterranean):
- 300g Mozzarella, shredded
- 4 Tomatoes
- 1 sprig of Thyme
- Pepper to taste
- Olive Oil
- 1 pack of Bocconcini
- 1 bunch of Basil
- 150g Cooked Ham, diced
Filling 2 (Vegetables):
- 1 Red Bell Pepper
- 2 Onions
- 2 Eggplants
- 300g Mozzarella, shredded
- Anchovies to taste
Procedure:
For the Dough:
- In a bowl, combine both flours and salt.
- In a separate container, dissolve yeast in warm water. Add this mixture to the flour and knead until you get a smooth, elastic dough.
- Cover the bowl with a clean cloth and let the dough rise in a warm place until it doubles in size.
- Preheat your MB Chef Oven to the desired temperature (recommendation: 650°F).
For Filling 1 (Mediterranean):
- Roll out the dough into small rounds.
- On one half of each round, place a layer of shredded mozzarella, sliced tomatoes, thyme leaves, pepper, a drizzle of olive oil, bocconcini, chopped basil, and diced cooked ham.
- Fold the other half of the dough over the filling, seal the edges, and create a calzone shape.
For Filling 2 (Vegetables):
- Roll out the dough into small rounds.
- On one half of each round, place a layer of shredded mozzarella, sliced red bell pepper, sliced onions, sliced eggplants, and anchovies to taste.
- Fold the other half of the dough over the filling, seal the edges, and create a calzone shape.
Baking:
- Place the calzones in your preheated MB Chef Oven and bake until golden brown, approximately 15-20 minutes.
- Once done, remove from the oven and let them cool slightly before serving.
